Easy, Tasty Treats For Busy Lifestyles

Lately, I have been finding many uses for coconut oil and here are a couple of easy to make treats for people on the go.  And isn't that just about everyone these days!


This first recipe is Coconut Almond Fudge and is a delicious way to incorporate the healing powers of unrefined coconut oil.  This concoction just melts in your mouth.
Coconut Almond Fudge

Ingredients: 
1 cup coconut oil, at room temperature
1/2 cup soaked almond butter
1 Tablespoon raw honey
1 Teaspoon pure vanilla extract
 Pinch of salt
1/2 cup roasted almonds, chopped and divided (garnish)

Instructions:
1.  In the bowl of a food processor, combine coconut oil, almond butter, honey, vanilla and sea salt.
2.  Blend until well mixed, about 30 seconds.
3.  In the bottom, of an ungreased 8x8 glass baking pan, spread 1/4 cup of the chopped almonds.
4.  Pour coconut mixture as evenly as possible into the 8x8 pan, over-the-top of the chopped almonds.
5.  Use a spatula to evenly spread the coconut mixture.
6.  Sprinkle remaining  chopped almonds evenly over top.  Freeze for 10 minutes.
7.  Score using a paring knife.  Return to the freezer for an additional 20 minutes.  Store fudge in the freezer until 5 minutes before serving.  Then allow it to rest at room temperature for 5 minutes, fully cut and serve.
8.  Return any leftovers to the freezer.

Servings is 16 pieces.

This second treat is is called Siggi's Coconut and Date Protein Bites.  And you won't find any hydrolyzed collagen (which is paper and seems to be common in protein bars)  in these yummy, healthy bites.

Coconut & Date Protein Bites
Ingredients:
1/4 cup Siggi's Vanilla yogurt
1 cup Medjool dates, chopped (about 12 -13 large dates)
1 cup raw cashews
1/4 cup hemp seeds, hulled
1/4 cup chia seeds
1/2 cup almond meal (flour)
1/4 Teaspoon fine sea salt
1/2 cup shredded unsweetened coconut

Directions:
Combine all ingredients in a food processor and blend to desired consistency.
When desired consistency is reached, form 1- ounce balls and the roll in shredded coconut to coat.
Store in refrigerator and enjoy as a quick snack!

Servings is 18 bites
