Plum Pudding

Here is a quick, easy and nutritious pudding.  I like the easy part.  The summers are too short here to be doing too much cooking.  This gave me a burst of energy after a long bike ride. I think the next time I make it, I will be doubling this recipe. 


1/2 cup macadamia nuts
4 dried apricots
3 plums
1/4 teaspoon sea salt
1/2 teaspoon vanilla extract
1/2 teaspoon lemon juice

Blend all ingredients until smooth and creamy, then serve.
 Yield: 3 or 4 servings
